Black Bean Salad

Super delicious veggie packed black bean salad is one of my favorite lunch or dinners.

Ingredients

  • 3 tbsp olive oil
  • 2 tablespoons lime juice
  • ½ tsp cumin
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 1 can black beans drained and rinsed
  • 1 bell pepper diced
  • ½ red or white onion diced
  • 1 medium zucchini quartered and diced
  • ½ cup shredded red cabbage

Instructions

  1. Combine the oil, lime juice, cumin, salt, and pepper in a large bowl.
  2. Add the beans, bell pepper, onion, zucchini, and red cabbage.
  3. Toss to combine, taste and adjust seasoning, add more salt if needed.
  4. Enjoy at room temperature or chilled.
