Black Bean Salsa Recipe

Ingredients

  • 1 cup leftover Vegan Black Beans Or canned black beans
  • 1/4 tsp dried oregano
  • 1 Tbsp olive oil
  • 1 Tbsp cilantro, minced
  • 2 tsp red wine vinegar if using canned beans, you may want to add a little more for extra flavor.
  • 1 clove garlic, minced
  • 1/4 red onion, diced about a 1/4 cup
  • 1/4 tsp red pepper flakes more if you like spicy!
  • salt and pepper to taste
If you're using canned beans, you may also add the following ingredients to increase flavor:
  • a little pinch of cumin
  • a little more vinegar
  • a little more olive oil

Instructions

  1. Place all the ingredients in a medium bowl, and stir gently to combine.
  2. Cover the bowl, and let it sit in your refrigerator for a least an hour developing flavors before serving.
  3. Serve with plantain chips, tortilla chips, bread or with a salad!
