Black Bean Salsa

This flavorful, chunky black bean salsa is a crowd pleaser and can be made in advance for an easy party appetizer; perfect with tortilla chips

Ingredients

  • 2 ounce can black beans , drained and rinsed
  • ½ cup frozen corn thawed
  • 1 ounce can diced green chiles
  • 2 tomatoes diced
  • 1 red onion chopped
  • 1 Jalapeño finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • tortilla chips for serving

Instructions

  1. Place the beans, corn, chiles, tomatoes, onions, jalapeno peppers and cilantro in a large bowl. Squeeze the lime juice on top, season with cumin, salt and pepper and toss gently to combine.
  2. Enjoy immediately at room temperature, or cover and refrigerate until cool, about 1 hour.
  3. Serve with your favorite tortilla chips or top of tacos, salads and bowls.

Notes

  • Storage: Store any leftovers in an airtight container for up to 5 days.
