Black Bean Tacos

These black bean tacos are quick, easy, and totally delicious! A healthy take on taco night, they can be made vegan or vegetarian and are gloriously gluten-free!

Ingredients

  • 1 can black beans (approx. 15 oz)
  • 3-4 TBSP salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp ground cayenne pepper (spicy) or paprika (mild)
  • ⅛ tsp salt or to taste
  • 6 small corn tortillas (can swap for flour or taco shell of choice)
TASTY TOPPINGS: choose your favorites
  • shredded lettuce
  • grated cheddar or mexican cheese (skip if vegan)
  • chopped tomatoes
  • chopped red or white onion
  • sliced jalapeno
  • salsa
  • guacamole or sliced avocado
  • sour cream (regular or vegan)

Instructions

  1. Drain and rinse black beans and add to a small saucepan set to medium-low heat. Add a few tablespoons of your favorite salsa and season beans with chili powder, cumin, cayenne or paprika, and salt. Heat until beans are warmed through and add any addiitonal spices to taste. Leave on low/warm setting until ready to serve.
  2. While your black beans cook, chop and prep your toppings.
  3. Warm tortillas on a lightly oiled or nonstick skillet.

Notes

  • If you don't have individual spices handy, you can 100% use premade taco seasoning blend to season your beans with. Simply start with 2 tsp or so and then add extra to taste.
  • Recipe yields 6 tacos using small soft corn tortillas.
