Black Walnut Pumpkin Bread
Black Walnut Pumpkin Bread is a moist loaf combining canned pumpkin, eggs, oil, and warm spices with chopped black walnuts for texture. Baked until a tester comes out clean, this bread offers a tender crumb with the seasonal flavors of cinnamon and nutmeg and the crunchy bite of walnuts.
Ingredients
- 2 egg
- ½ cup neutral cooking oil canola or vegetable, generic cooking oil
- 1 cup pumpkin canned
- ⅓ cup water
- 1 ¼ cups granulated sugar
- 1 ½ cup all-purpose flour
- ¼ teaspoon salt
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 cup black walnut or substitute regular walnuts or pecans, chopped
Instructions
- Preheat the oven to 350 degrees. Grease and flour a loaf pan and set aside.
- Combine the eggs, oil, pumpkin and water in a large bowl. Whisk or mix the wet ingredients until well blended.
- Sift the dry ingredients together in a small bowl.
- Stir the dry ingredients into the wet ingredients.
- Stir in the chopped walnuts.
- Pour into the prepared loaf pan.
- Bake for one hour or until a tester inserted near the center comes out clean.
- Remove from the oven and cool in the pan on a wire rack for about 10 minutes. Remove the loaf from the pan and let it cool completely.
- Dust with powdered sugar after the bread has cooled (optional).
Notes
- This bread can be served plain or with cream cheese, butter, or honey for extra flavor.
- It works well as dessert, breakfast, or a snack.
- Store wrapped at room temperature for up to two days or freeze tightly wrapped for longer storage.
