  • 2 egg
  • ½ cup neutral cooking oil canola or vegetable, generic cooking oil
  • 1 cup pumpkin canned
  • cup water
  • 1 ¼ cups granulated sugar
  • 1 ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup black walnut or substitute regular walnuts or pecans, chopped

Instructions

  1. Preheat the oven to 350 degrees. Grease and flour a loaf pan and set aside.
  2. Combine the eggs, oil, pumpkin and water in a large bowl. Whisk or mix the wet ingredients until well blended.
  3. Sift the dry ingredients together in a small bowl.
  4. Stir the dry ingredients into the wet ingredients.
  5. Stir in the chopped walnuts.
  6. Pour into the prepared loaf pan.
  7. Bake for one hour or until a tester inserted near the center comes out clean.
  8. Remove from the oven and cool in the pan on a wire rack for about 10 minutes. Remove the loaf from the pan and let it cool completely.
  9. Dust with powdered sugar after the bread has cooled (optional).
