Blackberry and Apple Loaf

Easy to make and utterly delicious, this spiced Blackberry and Apple Loaf can be eaten sliced on its own or with butter.

Ingredients

  • 200 g plain flour
  • 100 g caster sugar
  • 50 g light muscovado sugar
  • ½ tsp cinnamon
  • ½ tsp mixed spice
  • ½ tsp salt
  • ½ tsp bicarbonate of soda
  • 135 mls olive oil light
  • 2 egg lightly beaten, large, free-range
  • ½ tsp vanilla extract
  • 120 g blackberries frozen
  • 1 apple peeled and chopped (do this at last minute, dessert variety
  • Topping:
  • 1 tbsp demerara sugar

Instructions

  1. Pre-heat oven to 180°C.
  2. Grease and flour a loaf tin (22 x 11 x 6 cm)
  3. Sieve the flour and mix all the dry ingredients together.
  4. Then with a large spoon fold in the eggs, oil, vanilla extract, apples and blackberries until just mixed.
  5. Place in a loaf tin and sprinkle on the Demerara sugar.
  6. Bake for 65 – 70 minutes until a skewer comes out clean.
  7. Serve with butter or on its own. Will last for several days kept in an airtight container.
