Blackberry, Banana and Oat Breakfast Popsicles

Breakfast popsicles are a fun way to eat a healthy breakfast in the summer. It's pretty much porridge ingredients frozen on a stick.

Ingredients

  • 1 cup (240ml) almond milk
  • ½ cup (50g) oats (gluten-free if required) + 3 tablespoon for sprinkling
  • 1 ripe banana
  • 1 tablespoon honey or maple syrup optional
  • ½ teaspoon vanilla extract
  • 3 tablespoons PLAIN yogurt or dairy free version
  • handful of blackberries or other seasonal fruit

Instructions

  1. Whiz the almond milk, oats, banana, honey and vanilla in a blender until smooth. Pour into popsicle/ice lolly moulds to fill ⅓.
  2. Spoon in a small drizzle of yogurt to fill to ⅔, then add a few blackberries and a small sprinkling of oats. Fill to the top with the remaining oat/milk mixture.
  3. Freeze for at least 4 hours or overnight, until solid.
  4. Run under hot water to release from the moulds and serve for breakfast!
