Ingredients

  • 5 cups blackberry rinsed and drained, fresh
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 cup granulated sugar divided, plus 2 tablespoons
  • 1 cup all-purpose flour
  • 1/4 cup dark brown sugar (light brown sugar is okay too)
  • 1/2 teaspoon salt
  • 1 large egg lightly beaten
  • 6 tablespoons butter melted, unsalted
  • Ice cream for serving (optional, or freshly whipped cream

Instructions

    Cup of Yum
  1. Preheat the oven to 375 degrees Fahrenheit. Place blackberries in a lightly greased, shallow 1-quart baking dish. Sprinkle with lemon juice and 2 tablespoons sugar, then toss to coat; set aside.
  2. In a large bowl, mix together remaining sugar, flour, brown sugar and salt.
  3. Stir in the egg until the mixture resembles a coarse meal.
  4. Sprinkle the biscuit mixture over the berries, then drizzle the butter evenly over the cobbler.
  5. Bake for 40-45 minutes, until golden brown and bubbly. Allow to stand at room temperature for 10 minutes before serving with ice cream or freshly whipped cream, if desired.

Notes

  • Store leftover cobbler at room temperature wrapped tightly for 3-4 days.
  • Refrigeration is possible but may cause the topping to become soggy.
  • Freezing is not recommended as it alters the dry, crumbly texture of the topping.
