Blackberry Cobbler
Description
The Blackberry Cobbler recipe features fresh blackberries coated with lemon juice and sugar, providing brightness and natural sweetness. The topping is prepared by mixing flour with granulated and brown sugar, salt, and egg, creating a coarse mixture that is spread over the fruit and drizzled with melted butter. Baking until golden and bubbling, the cobbler offers a tender fruit base beneath a crisp, sweet crust.
This dessert delivers a balance of tartness from the blackberries and richness from the sugary topping. Serving it slightly cooled and accompanied by ice cream or whipped cream adds a creamy contrast to the warm, textured cobbler.
Leftover cobbler can be stored on the countertop tightly wrapped for up to four days, though refrigeration may soften the topping. Freezing is not recommended due to textural changes in the crumbly topping after thawing.
Ingredients
- 5 cups blackberry rinsed and drained, fresh
- 1 tablespoon lemon juice freshly squeezed
- 1/2 cup granulated sugar divided, plus 2 tablespoons
- 1 cup all-purpose flour
- 1/4 cup dark brown sugar (light brown sugar is okay too)
- 1/2 teaspoon salt
- 1 large egg lightly beaten
- 6 tablespoons butter melted, unsalted
- Ice cream for serving (optional, or freshly whipped cream
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Place blackberries in a lightly greased, shallow 1-quart baking dish. Sprinkle with lemon juice and 2 tablespoons sugar, then toss to coat; set aside.
- In a large bowl, mix together remaining sugar, flour, brown sugar and salt.
- Stir in the egg until the mixture resembles a coarse meal.
- Sprinkle the biscuit mixture over the berries, then drizzle the butter evenly over the cobbler.
- Bake for 40-45 minutes, until golden brown and bubbly. Allow to stand at room temperature for 10 minutes before serving with ice cream or freshly whipped cream, if desired.
Notes
- Store leftover cobbler at room temperature wrapped tightly for 3-4 days.
- Refrigeration is possible but may cause the topping to become soggy.
- Freezing is not recommended as it alters the dry, crumbly texture of the topping.
