Blackberry Financiers

Blackberry Financiers are small almond cakes featuring nutty browned butter and fresh blackberries arranged on top. Their texture is moist and tender with a golden crust. The use of browned butter adds depth, while the honey naturally sweetens and moistens the batter. These bite-sized cakes are suitable for tea time or a light dessert.

Description

This recipe produces blackberry financiers, which are delicate French almond cakes characterized by a tender crumb with a slight crispness on the edges. The batter includes browned butter, which is melted and cooked until the milk solids darken, imparting a rich, toasty flavor. Ground almonds and flour make up the dry base, combined with powdered sugar and egg whites to create a light batter.

Honey is folded in for additional sweetness and moisture, balancing the nuttiness of the browned butter. Fresh or thawed blackberries are placed on top of each cake before baking, adding bursts of tart fruitiness and slightly juicy texture to complement the crumbly cakes.

Each financier is baked until golden and just set to preserve moistness. They make an elegant snack or accompaniment to coffee or tea, with a subtle almond and butter flavor enhanced by the fresh berries.

Ingredients

Servings
  • 1/2 cup butter plus 5 tablespoons, unsalted
  • 1 cup almonds sliced
  • 1/2 cup all-purpose flour
  • 1 1/2 cups powdered sugar plus 2 tablespoons, additional for dusting
  • 5 egg large, whites
  • 2 tablespoons honey
  • vegetable oil nonstick spray
  • 2 cups blackberry fresh or frozen, thawed, halved

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Simmer until browned bits begin to form, frequently scraping the bottom of the pan. Continue to simmer until fragrant and dark brown but not burnt, about 6 to 7 minutes. Scrape the butter and all the browned bits into a medium bowl and let cool for 3 to 4 minutes.
  2. Meanwhile, process the almonds and flour in a food processor until the nuts are finely ground. Transfer to a medium bowl and whisk in 1 1/2 cups plus 2 tablespoons of powdered sugar. Add the egg whites and mix until smooth, then fold in the honey.
  3. Fold the browned butter into the batter. Do ahead: The batter can be made up to 3 days in advance. Cover and chill.
  4. Arrange a rack in the middle of the oven and preheat to 375°F (190°C). Coat the muffin cups with nonstick spray. Pour 1 generous tablespoon of batter into each prepared muffin cup and top with 3 to 4 blackberry halves.
  5. Bake until the cakes are golden brown and just cooked through, about 15 to 16 minutes. Let them cool in the pan for 10 minutes before removing. Serve warm or at room temperature, dusting with powdered sugar just before serving.
