Blackberry Peach Arugula Salad with Honey Lime Dressing
Arugula is topped with tart blackberries, juicy peaches, nutty farro, creamy avocado, crisp cucumbers, crunchy pecans, red onion, salty feta cheese, and fresh herbs. Drizzle with a simple honey lime dressing!
Ingredients
For the salad:
- 5 oz arugula
- 2 cups farro cooked
- 3 peach pitted and sliced, medium ripe
- 1 cup blackberry
- 1 cup cucumber diced
- 1 avocado chopped
- 1/2 cup feta cheese or goat cheese
- 1/2 cup pecan chopped; or almonds
- 1/4 cup red onion thinly sliced
- 2 tablespoons mint chopped
- 2 tablespoons basil chopped
For the dressing:
- 1/3 cup olive oil or avocado oil
- lime zest of 1
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1 tablespoon red wine vinegar
- 1 shallot minced, small
- 1 clove garlic minced
- kosher salt to taste
- black pepper to taste
Instructions
- In a large bowl or on a large platter, combine the arugula, cooked farro, peaches, blackberries, cucumber, avocado, cheese, nuts, onion, and herbs.
- In a small bowl or in a glass jar, whisk together the oil, lime zest, lime juice, honey, red wine vinegar, shallot, garlic, salt, and pepper.
- Pour the dressing over the salad and gently toss together until the salad is well coated. Serve.
