Blackberry Prosciutto Toast

Ingredients

  • 3 " slices Wegmans 7 Grain Bread (171 grams)
  • 1/2 cup part skim ricotta cheese
  • 3 tbsp blackberry jam
  • 2 lices prosciutto, torn into pieces
  • 3 tbsp fresh basil, chopped
  • 1 tbsp unsalted butter
  • Optional: honey for drizzling on top

Instructions

  1. Lightly butter toast on both sides, then toast in a skillet until lightly golden brown on both sides, about 1-2 minutes per side. Set aside to cool slightly.
  2. Add ricotta cheese to a medium bowl and whisk until smooth (I like using my Braun MultiQuick with Whisk attachment for this!). Divide whipped ricotta among 3 slices of toast and spread evenly.
  3. Add blackberry jam on top of whipped ricotta. If the jam is not very spreadable coming out of the jar, you can break it up with a spoon or whisk in a bit of water so it can spread easily over top of the ricotta.
  4. Layer the prosciutto on top of the blackberry jam, then top with fresh basil.
  5. Optional: Add fresh blackberries and a drizzle of honey before serving.
