Blackberry Tartlets Recipe

Blackberry tartlets make the perfect addition to a shower, brunch, or special party. Light and tasty, these blackberry tartlets will become a favorite.

Ingredients

  • 2 2 (12-ounce packages) frozen blackberries , thawed
  • 1/2 1/2 cup sugar
  • 1/3 1/3 cup fresh orange juice
  • 1/8 1/8 teaspoon kosher salt
  • 2 2 tablespoons cornstarch
  • 2 2 tablespoons water
  • 1 1/2 1 1/2 tablespoons butter
  • 1/2 1/2 teaspoon vanilla extract
  • 30 30 frozen miniature phyllo shells thawed
  • 1 1/4 1 1/4 cups frozen fat-free whipped topping thawed
  • 30 30 fresh blackberries

Instructions

    Cup of Yum
  1. Combine first 4 ingredients in a large saucepan.
  2. Bring to a boil; reduce heat, and simmer uncovered for 5 minutes.
  3. Strain berry mixture through sieve. Discard solids.
  4. Pour berry juice back into saucepan.
  5. Combine cornstarch and water.
  6. Pour into berry mixture.
  7. Bring to a boil over medium-high heat, stirring constantly. Cook 1 minute.
  8. Remove from heat and add butter and vanilla. Cool slightly.
  9. Spoon 2 teaspoons of berry mixture into each shell.
  10. Chill 2 hours in refrigerator or approximately 15 minutes in the freezer.
  11. Top each tartlet with 1 teaspoon whipped topping and a fresh berry.
  12. Serve immediately or keep chilled until ready to serve.
