Ingredients

  • 1 pound Shrimp you can also remove the tails if you prefer, jumbo, peeled and deveined
  • 1 Tablespoon Cajun seasoning
  • 2 tablespoons olive oil
Avocado salsa:
  • 3 Roma tomato diced
  • (1) corn 11-ounce can, drained
  • (1) black beans 15 ounce can, rinsed and drained
  • 1/2 red onion diced
  • 2 avocado diced
  • 1/4 cup cilantro chopped
  • lime juice juice of one lime
  • black pepper to taste
  • salt to taste
  • feta cheese optional topping, crumbled
  • 4-6 flour tortillas

Instructions

  1. In a medium-sized bowl add the shrimp and cajun seasoning. Toss until coated. In a medium-sized skillet over medium-high heat add olive oil and shrimp. Cook for about 2-3 minutes until no longer pink.
  2. To make the avocado salsa: Add the tomatoes, corn, black beans, red onion, avocado, lime juice and cilantro to a bowl. Salt and pepper to taste.
  3. Assemble the tacos dividing the avocado salsa and topping with shrimp. Sprinkle with crumbled feta and serve immediately.

Notes

  • If preferred, remove shrimp tails before cooking for easier eating.
  • Serve tacos promptly after assembling to keep tortillas from getting soggy and maintain the salsa’s fresh texture.
  • Adjust Cajun seasoning amount to control the spice level based on personal preference.
  • Feta cheese topping is optional but adds a creamy, tangy contrast to the spicy shrimp and fresh salsa.
