Blackened Chicken

This Blackened Chicken recipe is full of bold flavor! This simple seasoning blend is the easiest and quickest way to elevate chicken. It instantly adds a pop of flavor. This blackened chicken is great by itself, on top of salads, in tacos and burritos, in sandwiches, and more!

Ingredients

  • 3 large chicken breasts boneless and skinless
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp oregano
  • ½ tsp onion powder
  • ½ tsp cayenne powder
  • pinch sea salt
  • 2 tbsp olive oil

Instructions

  1. First, combine all seasonings in a small bowl.  Stir together.
  2. Use a meat mallet to pound the chicken to ½ inch thickness. Or, use the bottom of a mug.
  3. Season chicken all over with the spice mix.
  4. Heat olive oil in a large nonstick skillet over medium heat.  Once the oil is hot, carefully place the chicken inside the pan.
  5. Cook the chicken for about 5 minutes on each side.
  6. Finally, remove from the pan.  Allow the chicken to rest for 5 minutes before slicing and serving.
  7. Lastly, top with fresh herbs if desired.

  • Pound out the chicken using a meat mallet or the bottom of a mug.  This allows for even cooking and more tender chicken.
  • When possible, use fresh organic chicken breasts.
  • If needed, thaw frozen chicken breasts.
  • This seasoning is great on chicken thighs and chicken wings as well.
  • Cook chicken until it reaches 165 degrees Fahrenheit internally.
  • Use a meat thermometer to check the temperature.
  • Allow the chicken to rest for 5 to 10 minutes after cooking.  This locks in the juices.
  • Store leftovers in the fridge for up to 4 days.
