Blackened Mahi Mahi Recipe

Ingredients

  • 1 pound mahi mahi
  • 1 tablespoon blackened seasoning (see recipe below)
  • ¼ - ½ teaspoon salt optional
  • 2 tablespoons salted butter or oil
  • Lemon wedges optional
  • fresh parsley optional
Cajun Blackened Seasoning:
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt optional

  1. If making the homemade blackened seasoning: Mix all of the ingredients together in a small bowl or the glass jar you'll be storing it in.
  2. Cut the mahi mahi into 4 equal-sized filets and pat the fish dry with a paper towel.
  3. Sprinkle the blackened seasoning and salt, if seasoning does not already include it, over the filets and rub it into the fish.
  4. Melt butter in a cast-iron skillet over medium-high heat. Wait for at least 1 minute so butter is heated through. Add the mahi mahi to the skillet, skin side-up, and cook for 4-5 minutes. Flip the filets over and continue cooking for 3-4 more minutes or until cooked through.
  5. Serve blackened mahi mahi with lemon wedges and a sprinkle of fresh parsley, if desired.

Notes

  • Blackened Seasoning: The Evolving Table Cajun Blackened Seasoning spice blend was used when testing this recipe. If you opt for another brand (like Slap Ya' Mama or Tony's) you'll need to adjust the amount of salt and seasoning you add depending on your desired spice level.
  • Crispy sear: A cast-iron skillet is essential to get that classic, crusty char on the blackened fish.
