Blended Baked Oats

Blended baked oats are an easy baked oatmeal made with simple ingredients. The baked oats make a dense, moist, muffin-like breakfast.

Ingredients

  • ⅔ cup milk
  • 1 cup rolled oats
  • ¼ cup brown sugar
  • 1 large egg
  • 1 medium ripe banana
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons mini semisweet chocolate chips divided

Instructions

  1. Preheat the oven to 375°F. Grease 2 ramekins, and set aside.
  2. Add the milk, oats, brown sugar, banana, vanilla extract, baking powder, and salt to a blender.
  3. Blend for about 30 seconds, or until well-combined.
  4. Stir in half of the chocolate chips.
  5. Pour the oatmeal mixture into the prepared ramekins.
  6. Set the ramekins on a rimmed baking sheet.
  7. Sprinkle the remaining chocolate chips over the oatmeal mixture.
  8. Bake for about 25-30 minutes, or until the oats spring back when lightly pressed.
  9. Remove from the oven, and enjoy!

Notes

  • Milk: Any type of milk, from skim milk to whole milk, will work. Plant-based milks, like almond milk, can also be used.
  • Brown sugar: I use light brown sugar. Feel free to use more or less depending on how sweet you'd like the oats to be.
  • Bananas: It's important to use ripe or overripe bananas because they give the oats more flavor and sweetness.
  • Chocolate chips: I like to use mini chocolate chips because they give little bites of chocolate throughout the oats. Regular chocolate chips will also work.
  • Ramekins: I use 6 ounce ramekins for this recipe.
