Blood Orange and Beet Salad with Honeyed Yogurt

Ingredients

  • 2 cups PLAIN yogurt
  • 3 tablespoons honey
  • 4 blood oranges, sliced into 1/2″ inch wheels with the skin removed
  • 4 small red beets, roasted peeled and quartered
  • ¼ cup slivered almonds
  • ½ teaspoon poppy seeds

Instructions

  1. Pour yogurt and honey into a mixing bowl and whisk together.
  2. Spread mixture onto a large platter and top with blood oranges and beets.
  3. Sprinkle dish with almonds and poppy seeds. Serve.
