BLT Endive Bites
BLT Endive Bites are a unique twist on BLT for an easy 10 minute appetizer that will impress your party guests. These little finger foods are lightened up with Greek Yogurt but have all the rich and delicious flavors of the classic sandwich!

Ingredients
- 10 leaves of endive
- ¼ c. non-fat plain Greek yogurt
- ¼ mayonnaise
- ⅓ c. parmesan grated
- ¼ c. green onion chopped
- pinch of salt
- ¾ Bacon crumbles
- ⅓ c. chopped tomatoes
Instructions
- In a small bowl, mix together the Greek yogurt, mayonnaise, Parmesan, green onion, 1/2 c. of the bacon and a pinch of salt.
- Spread 1 heaping tablespoon of the mixture in each endive leaf and top with the remaining bacon and chopped tomatoes. Serve immediately or store refrigerated for up to 3 hours.
