BLT Potato Salad

Ingredients

  • 2 pounds potato cut into 2” cubes, red
  • 6 lices Bacon
  • 2 cups cherry tomato halved
  • 2 scallions , thinly sliced
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • 3 cups romaine lettuce , shredded

Instructions

  1. Add your potatoes to a large pot covered with water and bring it to a boil, cooking for 10-12 minutes until the potatoes are fork tender.
  2. Drain the potatoes and let them cool while you cook your bacon.
  3. Cook and chop your bacon into large chunks.
  4. Add bacon, potatoes, tomato and scallions to a large mixing bowl.
  5. Whisk together the mayonnaise, mustard, apple cider vinegar, salt and pepper and toss it gently with the ingredients and refrigerate before serving.
  6. Add lettuce and toss again just before serving.
