Blueberry Baked Oatmeal
Blueberry Baked Oatmeal blends rolled oats, cinnamon, coconut sugar, and baking soda with mashed banana, almond milk, egg, and vanilla to create a baked, comforting breakfast or snack. Ingredients
- 1 cup rolled oats old-fashioned
- 4 tablespoons coconut sugar
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup almond milk unsweetened vanilla
- 1/2 cup banana mashed
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups blueberries thawed, frozen
- 1 banana sliced, for garnish
Instructions
- Preheat your oven to 350 degrees Fahrenheit and spray a casserole dish with cooking spray.
- In a medium bowl, whisk the oats, sugar, cinnamon, baking soda, and salt.
- In a separate large bowl, whisk the plant milk, mashed banana, egg and vanilla extract together.
- Add the dry ingredients into the wet and stir until combined. Fold in the blueberries.
- Pour into the casserole dish, top with the sliced banana, and bake until set, about 45 minutes. Let cool to room temperature in the dish.
