  • 4 tablespoons coconut sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup almond milk unsweetened vanilla
  • 1/2 cup banana mashed
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups blueberries thawed, frozen
  • 1 banana sliced, for garnish

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and spray a casserole dish with cooking spray.
  2. In a medium bowl, whisk the oats, sugar, cinnamon, baking soda, and salt.
  3. In a separate large bowl, whisk the plant milk, mashed banana, egg and vanilla extract together.
  4. Add the dry ingredients into the wet and stir until combined. Fold in the blueberries.
