  • ⅓ cup raw pepitas could substitute raw nuts
  • 2 tablespoon flaxseed meal
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • ¾ teaspoon salt
  • 2 cups unsweetened almond coconut milk
  • ⅓ cup pure maple syrup
  • 2 tablespoon melted coconut oil cooled slightly
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
