Blueberry Baked Oatmeal (Dairy-Free & Gluten-Free)
Blueberry Baked Oatmeal offers a warm, tender texture with bursts of juicy blueberries throughout. Made dairy-free and gluten-free, it combines rolled oats with coconut milk and eggs for structure, sweetness from maple syrup, and a subtle vanilla aroma. Baking produces a creamy set texture while the coconut flakes add slight chewiness. Cooling before serving helps the oatmeal hold its shape for easy slicing.
Ingredients
- 2 cups gluten-free rolled oats
- 1 cup flaked coconut optional, or shredded, unsweetened
- 1½ teaspoons baking powder
- ¼ teaspoon ground cinnamon
- 1/4 teaspoon salt sea salt
- 3 egg lightly beaten, large
- 2 cups coconut milk or almond milk
- 1 teaspoon vanilla extract pure
- 1/3 cup pure maple syrup
- 2 cups blueberries fresh or frozen
Instructions
- Preheat the oven to 350 degrees F. Lightly oil a 8" x 8" baking dish.
- Stir together the rolled oats, coconut, baking powder, cinnamon and sea salt in a mixing bowl.
- Whisk together the eggs, coconut milk, vanilla extract, and maple syrup in a seperate mixing bowl. Add the oat mixture to the bowl with the wet mixture and stir well to combine. Stir in the frozen blueberries and pour the mixture into the prepared baking dish.
- Place on the center rack of the oven and bake for 55 to 65 minutes, or until oatmeal has set up and is cooked through.
- Remove from the oven and allow baked oatmeal to cool 20 to 30 minutes before serving (Note: if you don't allow the oatmeal to sit after it comes out of the oven, it will fall apart).
