Ingredients

  • 1 cup raw cashews
  • ½ cup dried blueberries
  • ½ cup desiccated coconut
  • ¼ cup rolled oats
  • ¼ cup cream cheese
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • Extra desiccated coconut for rolling (optional)

Instructions

  1. Place the raw cashews, dried blueberries, and desiccated coconut in a food processor. Pulse until the mixture is finely ground.
  2. Add the rolled oats, cream cheese, maple syrup (or honey), vanilla extract, lemon zest, and lemon juice to the food processor. Process until the mixture comes together and forms a dough.
  3. Roll the mixture into small balls, about the size of a tablespoon.
  4. If desired, roll the bliss balls in extra desiccated coconut for a decorative finish.
  5. Place the bliss balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
  6. Store the bliss balls in an airtight container in the refrigerator.
