Blueberry Chia Pudding

Ingredients

  • 2 cups blueberries fresh or frozen
  • ¼ cup chia seeds
  • 1 cup milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, cook the blueberries on medium heat for 8-12 minutes, stirring occasionally, until they cook down into a compote.
  2. Remove from heat and set aside to cool for 5 minutes.
  3. Add the chia seeds, milk, maple syrup, and vanilla extract to a bowl and mix together until well combined.
  4. Add the blueberry compote to the chia pudding and stir well to combine.
  5. Let it set for a couple of minutes (5-10 minutes) in the fridge before going back in and giving it a second stir.
  6. Let the chia pudding set in the fridge for at least two hours or overnight.
  7. Give it a stir before serving, and add in your favorite toppings, such as yogurt, fruit, nuts, and/or seeds.
