Blueberry Compote

This blueberry compote is the perfect topping for pancakes, ice cream, yogurt, or oatmeal. It's the perfect way to preserve the taste of summer!

Ingredients

  • 2 pints blueberries
  • 3 tablespoons brown sugar
  • 2 tablespoons water
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. In a 12-inch skillet, set over medium heat, add 1-½ cups blueberries, brown sugar, water, lemon juice, lemon zest, and vanilla extract.
  2. Stir to combine and simmer over medium heat for 10 minutes.
  3. Add the remaining ½ cup of fresh blueberries and simmer for 10 minutes. The mixture should be slightly jammy but still a little loose.
  4. Remove the compote from the heat and let cool. As it cools, the mixture will become more jammy.
