Blueberry Corn Salsa
Blueberry Corn Salsa blends fresh blueberries, sweet corn, and diced strawberries with cilantro and mild jalapeno for a bright, fruity relish. Lime zest and juice add acidity, with optional hot sauce and seasoning to balance flavors. It can be served immediately with chips or as a fresh accompaniment to grilled proteins.
Ingredients
- 6 ounces blueberries about 1 heaping cup, fresh
- 1 cup corn I use frozen roasted corn that I allow to thaw and then drain; fresh corn may be substituted
- ½ cup strawberry trimmed and diced small, fresh
- ⅓ to ½ cup cilantro stems discarded, finely minced, fresh leaves
- jalapeno pepper seeded and finely chopped; or to taste (I use half of one jalapeno, about 3 tablespoons, green
- 1 teaspoon lime zest
- 2 to 3 tablespoons lime juice
- 1 teaspoon hot sauce or to taste (Tabasco, Cholula, Tapatio, etc.)
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 1 teaspoon granulated sugar optional and to taste
Instructions
- To a large bowl, add all the ingredients (except sugar), stir to combine, and taste.
- Depending on preference, add the sugar to taste; or more salt, pepper, lime juice, hot sauce depending.
- Serve immediately with chips or as a side ‘salad’ or relish with the protein of your choice.
Notes
- Keep salsa ingredients whole for distinct textures; briefly blending is an option.
- Store in an airtight container in the fridge up to 5 days; expect some liquid release.
- Flavors improve over time as they meld together.
