Blueberry Cottage Cheese Popsicles

Blueberry cottage cheese popsicles are a delicious summer treat that is a combo of high protein blueberry ice cream on a popsicle stick. Use vegan yogurt and maple syrup instead of cottage cheese for vegan popsicles.

Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh blueberries
  • ¼ cup honey
  • 1 teaspoon lemon juice

Instructions

  1. Blend cottage cheese until smooth.
  2. Add honey and lemon juice, blend to combine.
  3. Fold blueberries into cottage cheese mixture.
  4. Pour into popsicle molds.
  5. Insert popsicle sticks.
  6. Freeze for at least 6 hours.
  7. Run molds under warm water to remove popsicles.

Notes

  • Use small curd cottage cheese for smoother texture. Adjust honey to taste. Use vegan yogurt and maple syrup for vegan popsicles.
