Blueberry Delight
Blueberry Delight features fresh blueberries topped with ricotta cheese and brown sugar, broiled briefly to create a caramelized, sweet topping over the creamy ricotta. This simple dessert offers contrasting textures of soft berries, creamy cheese, and a slightly crisp sugar crust. It can be served warm or at room temperature, making it an appealing way to showcase fresh blueberries.
Ingredients
- 2 cups blueberries fresh
- 1 cup ricotta cheese whole milk
- 4 tablespoons brown sugar
Instructions
- Bring the ricotta to room temperature.
- Preheat the broiler and place the rack about 6 to 8 inches away from the heat source.
- Spread the blueberries in a shallow baking dish or divide them among 4 ramekins.
- Top with the ricotta that you will spread well all over the fruits to cover well. Sprinkle with brown sugar breaking up any clumps with your fingers.
- Place your baking dish or ramekins, on a cookie sheet and place the cookie sheet under the broiler, until the sugar melts, bubbles are forming, and you can see the caramelization starting to take place, about 5 minutes.
- Let it cool off and enjoy.
Notes
- Store leftovers in the refrigerator and bring to room temperature before reheating under the broiler to restore the caramelized topping.
- Add extra brown sugar on top before reheating under the broiler to enhance caramelization like on the first serving.
