Blueberry Delight
Description
The recipe begins by bringing whole milk ricotta cheese to room temperature to ensure it spreads smoothly over the blueberries. Blueberries are arranged in a shallow dish or in individual ramekins. The ricotta is spread evenly over the top of the berries to cover them well. Brown sugar is sprinkled over the ricotta, broken up to prevent clumps, to allow for even caramelization.
The dish is placed under a preheated broiler on a baking sheet positioned about 6 to 8 inches from the heat source. The broiler melts the sugar and creates bubbles as the sugar caramelizes and begins to brown lightly, usually within about five minutes. Once removed from the broiler, the dessert is allowed to cool slightly before serving.
This dessert offers a balance of fresh blueberry tartness, creamy ricotta, and sweet caramelized sugar flavors with a pleasing range of textures from soft to slightly crisp. Leftovers can be reheated under the broiler to refresh the caramelization if desired. The recipe requires minimal ingredients and preparation yet yields a delightful result.
Ingredients
- 2 cups blueberries fresh
- 1 cup ricotta cheese whole milk
- 4 tablespoons brown sugar

- Top with the ricotta that you will spread well all over the fruits to cover well. Sprinkle with brown sugar breaking up any clumps with your fingers.

Notes
- Store leftovers in the refrigerator and bring to room temperature before reheating under the broiler to restore the caramelized topping.
- Add extra brown sugar on top before reheating under the broiler to enhance caramelization like on the first serving.
