Blueberry Eyeball Smoothie Bowl

The Blueberry Eyeball Smoothie Bowl blends blueberries and banana for a thick, fruity smoothie base. It gets a playful twist by topping with lychee "eyeballs," made by placing blueberries inside lychees for a striking visual effect.

Ingredients

  • 2 cups blueberries fresh or frozen, plus 4 for eyeballs
  • 1 banana frozen
  • ⅓-1/2 cup apple juice
  • 4 lychees drained (from a can)

Instructions

  1. Puree the blueberries, banana and apple juice together in a blender until smooth. Add more apple juice as needed to get a thick consistency.
  2. To make the eyeballs, place one blueberry in the center of each lychee.
  3. Pour the blueberry smoothie into two bowls and top each bowl with two eyeballs.

Notes

  • Canned lychees can be found in most Asian food sections at grocery stores.
  • If lychees are not available, substitute with small pieces of honeydew melon for the "eyeball" effect.
