Blueberry Eyeball Smoothie Bowl
Description
This smoothie bowl combines pureed blueberries and frozen banana with apple juice to create a smooth, thick consistency. Using fresh or frozen blueberries works well, while the banana adds natural sweetness and creaminess. The eyecatching topping features canned lychees hollowed and filled with blueberries, providing a juicy, tender contrast and a unique appearance.
The bowl can be served immediately as a healthy breakfast or snack offering vibrant berry flavors and interesting textures. The frozen banana helps achieve the smoothie’s thickness, which can be adjusted with apple juice to desired consistency.
Canned lychees are commonly found in Asian food sections, but fresh substitutions such as honeydew melon can be used if lychees are unavailable.
Ingredients
- 2 cups blueberries fresh or frozen, plus 4 for eyeballs
- 1 banana frozen
- ⅓-1/2 cup apple juice
- 4 lychees drained (from a can)
Instructions
- Puree the blueberries, banana and apple juice together in a blender until smooth. Add more apple juice as needed to get a thick consistency.
- To make the eyeballs, place one blueberry in the center of each lychee.
- Pour the blueberry smoothie into two bowls and top each bowl with two eyeballs.
Notes
- Canned lychees can be found in most Asian food sections at grocery stores.
- If lychees are not available, substitute with small pieces of honeydew melon for the "eyeball" effect.
