Ingredients

  • 2 cups blueberries fresh
  • 2 teaspoons cornstarch or tapioca starch
  • 2 1/2 cups all-purpose flour unbleached
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/3 teaspoon salt
  • lemon zest of 1, organic
  • 1 1/2 cup milk or milk of choice, non-fat
  • 1/3 cup butter or margarine or neutral tasting oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice juice of 1 lemon
  • 2 tablespoon dark brown sugar optional topping
