Ingredients
- 2 cups uncooked oats, gluten-free if needed
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/4 cup toasted slivered almonds, optional
- 1 3/4 cup unsweetened almond milk or milk of choice
- 1/3 cup maple syrup
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups blueberries
Instructions
- Preheat oven to 350° F. and spray a 9x9 or similar size baking dish with cooking spray.
- In a large bowl whisk together the milk, maple syrup, egg, and vanilla. Add in the oats, cinnamon, baking powder, and salt and stir until combined. Stir in the blueberries and almonds.
- Pour the oat mixture into the prepared baking dish and bake for 35-40 minutes until it's golden brown and set in the middle. Let the baked oatmeal cool for 10 minutes before serving. Top with Greek yogurt, maple syrup or toppings of your choosing.
