Blueberry Mojito

Embrace the fresh fruit of summer and make my fresh Blueberry Mojito recipe. Perfect for entertaining or relaxing poolside with friends and family!

Ingredients

  • 1 cup fresh blueberries
  • ¼ cup Mint Simple Syrup
  • ½ cup clear rum
  • 12 mint leaves + more for garnish
  • 3 cups club soda divided

Instructions

  1. In each individual glass, muddle 4 mint leaves. Add ice and set to the side.
  2. Using a blender, blend blueberries, simple syrup, and rum until berries are smooth. Divide and pour evenly among 4 glasses.
  3. Top each glass with club soda. Garnish with additional mint leaves.

  • Make a pitcher the next time you entertain and let your guest get involved by letting them muddle their own fresh mint!
