Blueberry Mojito

This deliciously sweet blueberry mojito is just what summer needs! Freshly muddled blueberries combined with a mint simple syrup, white rum, lime juice, and a touch of fizzy soda water.

Ingredients

  • 3 sprigs of mint
  • 1/3 cup of fresh blueberries
  • 1 ounce Mint Simple Syrup
  • 1 ounce lime juice freshly squeezed
  • 2 ounces white rum
  • club soda
  • ice

Instructions

    Cup of Yum
  1. Place mint leaves at the bottom of your highball glass. 
  2. Add in the blueberries, mint simple syrup, and lime juice.
  3. Use a muddler to gently crush to release mint oils and blueberry juice.
  4. Add in the rum and mix with a bar spoon. 
  5. Fill the glass almost to the top with ice and club soda. 
  6. For garnish use extra blueberries, a mint sprig, or lime wedges. Serve immediately.

Notes

  • If you don’t want pieces of blueberry in your drink you can mash them in another bowl and strain the juice out of the berries.
