Blueberry Muffin Energy Balls

Blueberry Muffin Energy Balls combine raw almonds and cashews with sweet Medjool dates, dried blueberries, and flavorings like vanilla and lemon juice to create bite-sized snacks. The mixture is processed into a dough that's rolled into balls, offering a chewy texture with bursts of blueberry and nutty richness. These no-bake energy balls store well and provide a convenient, nutrient-dense snack option.

Ingredients

  • 1 cup almond raw
  • 1 cup cashew nuts raw
  • 1 cup Medjool dates about 10, pitted
  • 1 cup dried blueberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • pinch of sea salt

Instructions

Method 1:
    Cup of Yum
  1. Process: Add all ingredients into your food processor and blend until combined.
  2. Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
  3. To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.
Method 2:
  1. Process nuts: Place almonds and cashews into food processor and pulse until they are chopped into small pieces. Place nut mixture in a bowl and set aside.
  2. Process dates: Put dates into the food processor and pulse until a paste forms (the dates will probably form into a sticky ball).
  3. Add nuts and remaining ingredients: Add nuts back into the processor with the dates and add in blueberries, vanilla, lemon juice and sea salt. Pulse until everything is well combined.
  4. Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
  5. To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.

Notes

  • Soak dry dates in warm water for 10-15 minutes, then drain, to soften them before processing.
  • If the dough is crumbly, add extra dates or a teaspoon of water gradually until it holds together for forming balls.
  • Store energy balls in a sealed container in the fridge for up to 2 weeks or freeze for up to 3 months.
