Blueberry Muffin Energy Balls combine raw almonds and cashews with sweet Medjool dates, dried blueberries, and flavorings like vanilla and lemon juice to create bite-sized snacks. The mixture is processed into a dough that's rolled into balls, offering a chewy texture with bursts of blueberry and nutty richness. Ingredients
- 1 cup almond raw
- 1 cup cashew nuts raw
- 1 cup Medjool dates about 10, pitted
- 1 cup dried blueberries
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- pinch of sea salt
Instructions
Method 1:
- Process: Add all ingredients into your food processor and blend until combined.
- Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
- To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.
Method 2:
- Process nuts: Place almonds and cashews into food processor and pulse until they are chopped into small pieces. Place nut mixture in a bowl and set aside.
- Process dates: Put dates into the food processor and pulse until a paste forms (the dates will probably form into a sticky ball).
- Add nuts and remaining ingredients: Add nuts back into the processor with the dates and add in blueberries, vanilla, lemon juice and sea salt. Pulse until everything is well combined.
- Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
- To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.
Notes
- Soak dry dates in warm water for 10-15 minutes, then drain, to soften them before processing.
- If the dough is crumbly, add extra dates or a teaspoon of water gradually until it holds together for forming balls.
- Store energy balls in a sealed container in the fridge for up to 2 weeks or freeze for up to 3 months.
