Blueberry Muffin Energy Balls
Description
These energy balls mix raw almonds and cashews with pitted Medjool dates and dried blueberries, adding vanilla extract and lemon juice for brightness. The ingredients are processed until they form a sticky, uniform dough that is shaped into small balls. The combination provides a balance of natural sweetness, chewy dried berry texture, and nutty undertones.
The recipe includes two processing methods: blending all ingredients at once or pulsing nuts and dates separately to achieve a preferred texture. The resulting balls can be eaten immediately or refrigerated for 1-2 weeks or frozen up to 3 months, making them suitable for grab-and-go snacks.
Notes advise soaking hard dates briefly to soften them and adjusting the dough moisture with extra dates or water if it feels crumbly, ensuring proper binding.
Ingredients
- 1 cup almond raw
- 1 cup cashew nuts raw
- 1 cup Medjool dates about 10, pitted
- 1 cup dried blueberries
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- pinch of sea salt
Instructions
Method 1:
- Process: Add all ingredients into your food processor and blend until combined.
- Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
- To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.
Method 2:
- Process nuts: Place almonds and cashews into food processor and pulse until they are chopped into small pieces. Place nut mixture in a bowl and set aside.
- Process dates: Put dates into the food processor and pulse until a paste forms (the dates will probably form into a sticky ball).
- Add nuts and remaining ingredients: Add nuts back into the processor with the dates and add in blueberries, vanilla, lemon juice and sea salt. Pulse until everything is well combined.
Notes
- Soak dry dates in warm water for 10-15 minutes, then drain, to soften them before processing.
- If the dough is crumbly, add extra dates or a teaspoon of water gradually until it holds together for forming balls.
- Store energy balls in a sealed container in the fridge for up to 2 weeks or freeze for up to 3 months.
