Blueberry Muffin Oatmeal

Ingredients

  • 1/2 cup Quaker® Instant Oats
  • 3/4 cup milk or water
  • 1 Tablespoon blueberry jelly
  • 1 Tablespoon brown sugar
  • 1 Tablespoon chopped walnuts or almonds
  • 1/4 teaspoon cinnamon
  • handful of fresh blueberries

Instructions

  1. In a small bowl, combine the brown sugar, nuts, and cinnamon. Set aside.
  2. Combine the oats and milk or water in a microwave-safe bowl. Stir, then cook over high heat for 2 1/2 - 3 minutes until most of the liquid is absorbed and oats are cooked. Stir in the blueberry jelly.
  3. Sprinkle the brown sugar mixture over the top of the oatmeal then return the bowl to the microwave and cook over high heat for 30-45 more seconds. The brown sugar will caramelize into the top of the oatmeal.
  4. Splash with another tablespoon of milk if desired then sprinkle with fresh blueberries. Enjoy!
