Blueberry Oatmeal Bars

Only 6 ingredients in these Blueberry Oatmeal Squares. Use pie filling to have them turn out more like a cobbler or jam to have a packable snack.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup quick-cooking rolled oats
  • ⅔ cup brown sugar
  • ¼ teaspoon baking soda
  • ½ cup cold butter cut into cubes
  • 21 ounces blueberry pie filling or 10 ounces jam*

Instructions

  1. In mixing bowl, combine flour, oats, brown sugar, and baking soda.
  2. Using a pastry blender, cut in the cold butter cubes until the mixture resembles coarse crumbs.
  3. Reserve 1/2 cup of the flour mixture and set aside for the topping.
  4. Spray a 9x9 baking pan with cooking spray.
  5. Press remaining flour mixture into the bottom of the prepared pan.
  6. Spread the pie filling or jam on top of the flour.
  7. Sprinkle with reserved flour mixture.
  8. Press the topping gently into the jam with the palms of your hands.
  9. Bake at 350F for 30-35 minutes or until the top is golden brown.
  10. Allow the bars to cool completely, then cut and serve.

Notes

  • *Use whatever type of pie filling or jam that you'd like. If you use a whole can (21 ounces) of pie filling, your bars will turn out more like a cobbler. If you choose to use jam, the bars will be firmer.
