Blueberry Sourdough Sausage Stuffing

This Blueberry Sourdough Sausage Stuffing is so good, it will outshine the turkey this Thanksgiving.

Ingredients

  • 1 loaf sourdough bread cubed
  • 1.5 tablespoon olive oil
  • 6 Turkey Italian Sausages casings removed
  • 2 stalks celery diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 tablespoon fresh sage chopped
  • 2 tablespoon fresh thyme leaves
  • 2 cups chicken or turkey stock low sodium
  • 1 cup blueberries fresh, frozen, or dried
  • salt & pepper to taste
  • 2 tablespoon butter

  1. Preheat oven to 350°
  2. Spread cubed sourdough on a baking sheet and put into the oven for 10 minutes to dry out.
  3. In a skillet, heat oil over medium-high heat, then brown sausage meat, breaking up with a spoon, until cooked through. Add celery and onion, and sauté until vegetables are softened. Stir in the garlic, sage, and thyme.
  4. Put toasted bread cubes into a large bowl, and add sausage mixture, mixing until combined.
  5. Add poultry stock, one-half cup at a time, combining until bread is moist but not soggy.
  6. Add blueberries, combining well, then salt and pepper.
  7. Use 1 tablespoon  of butter to grease a 9”x 12” casserole dish, and transfer stuffing to the casserole.
  8. Put the remaining butter in dabs on the top of the stuffing, and bake at 350° for 30 minutes.

Notes

  • This recipe can be made up to two days ahead and refrigerated, unbaked, until ready to use.
  • If desired, add turkey drippings to the stuffing before baking.
