Ingredients
- 1 ⅓ cup fresh blueberries
- 2 cups all-purpose flour + 1 tablespoon
- 2 tablespoons granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups buttermilk
- 2 eggs separated
- ⅓ cup melted butter
- ¼ teaspoon almond extract or 1 teaspoon vanilla extract
Instructions
- Preheat waffle iron according to manufacturer's directions. Toss blueberries with 1 tablespoon flour and set aside.
- Combine dry ingredients in a medium bowl.
- In a separate bowl, mix buttermilk, egg yolks, butter, and extract. Set aside.
- Place egg whites in a stand mixer and beat on medium-high speed until stiff peaks form.
- Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites. Fold in blueberries.
- Grease waffle iron and drop batter, close the lid and cook 3-5 minutes or until golden.
