Blueberry Yogurt Waffles

Simple and quick to make, these blueberry Greek yogurt waffles are a delicious breakfast or brunch recipe to try. Perfectly crisp and fluffy.

Ingredients

  • 1 ¾ cup milk
  • ¼ cup Greek yogurt
  • 2 large eggs
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ¾ cup blueberries plus more for serving

Instructions

  1. Preheat the waffle iron over medium heat.
  2. In a large bowl, whisk together the greek yogurt, milk, eggs and vanilla extract until well blended. Add the flour, baking powder and salt, and stir to combine. Fold in the blueberries.
  3. Spray waffle iron with cooking spray. Pour ⅓ cup batter into preheated waffle iron. Cook until the outsides of the waffles are golden brown and slightly crisp on the edges, about 3-5 minutes.
  4. Serve immediately with fresh blueberries, or keep warm on a wire rack in the oven before serving.

Notes

  • Make ahead: The waffle batter can be kept in the fridge covered for up to 3 days.
  • Reheat: Any leftovers can be reheated in the oven at 360F til crispy.
  • Tip: Preheat and grease your waffle iron before adding the batter.
