Boiled Sweet Potatoes

Ingredients

  • 2 pounds sweet potatoes scrubbed
  • 2 tablespoons butter
  • salt and black pepper to taste

Instructions

    Cup of Yum
  1. Peel potatoes and cut into 1" chunks.
  2. Place potatoes in cold salted water and bring to a boil over high heat.
  3. Cook 18-20 minutes or until tender when pierced with a fork.
  4. Place potatoes in a strainer and drain well.
  5. Mash if desired and stir in butter, salt & pepper to taste.

Notes

  • Leftovers can be stored in an airtight container in the fridge for up to 5 days.
