These Boiled Sweet Potatoes are simple, sweet, & savory!

Ingredients
- 2 pounds sweet potatoes scrubbed
- 2 tablespoons butter
- salt and black pepper to taste

Instructions
- Peel potatoes and cut into 1" chunks.
- Place potatoes in cold salted water and bring to a boil over high heat.
- Cook 18-20 minutes or until tender when pierced with a fork.
- Place potatoes in a strainer and drain well.
- Mash if desired and stir in butter, salt & pepper to taste.
Notes
- Leftovers can be stored in an airtight container in the fridge for up to 5 days.
