Braised Chicken Breast with Mushrooms
Braised Chicken Breast with Mushrooms features boneless skinless chicken breasts browned then cooked slowly in a wine and chicken broth sauce with sautéed cremini mushrooms, onions, and garlic. The slow cooking enriches the sauce and keeps the chicken tender and flavorful. This dish pairs well as a main entrée served with rice or vegetables to soak up the savory sauce.
Ingredients
- 4 tablespoons olive oil , divided
- 3 chicken breast boneless skinless
- 1 teaspoon kosher salt , divided
- 1/2 teaspoon black pepper divided, coarse ground
- 8 ounces cremini mushroom sliced
- 1/2 yellow onion , diced
- 2 cloves garlic , minced
- 1 cup white wine
- 2 cups chicken broth
Instructions
- Add 2 tablespoons olive oil to a dutch oven on medium heat.
- Season the chicken with half the salt and pepper and sear on both sides, 4-5 minutes on each side.
- Remove chicken from the pan, then add in the remaining 2 tablespoons of olive oil.
- Add in the mushrooms and onions and sear well until browned, about 6-8 minutes.
- Season with remaining salt and pepper, add in garlic and stir.
- Add in the white wine, stir and cook until reduced by half, about 10 minutes.
- Add in the chicken broth, nestle the chicken back into the pot and cook for 15-20 minutes until sauce is reduced by 75%.
