  • 4 tablespoons olive oil , divided
  • 3 chicken breast boneless skinless
  • 1 teaspoon kosher salt , divided
  • 1/2 teaspoon black pepper divided, coarse ground
  • 8 ounces cremini mushroom sliced
  • 1/2 yellow onion , diced
  • 2 cloves garlic , minced
  • 1 cup white wine
  • 2 cups chicken broth

Instructions

  1. Add 2 tablespoons olive oil to a dutch oven on medium heat.
  2. Season the chicken with half the salt and pepper and sear on both sides, 4-5 minutes on each side.
  3. Remove chicken from the pan, then add in the remaining 2 tablespoons of olive oil.
  4. Add in the mushrooms and onions and sear well until browned, about 6-8 minutes.
  5. Season with remaining salt and pepper, add in garlic and stir.
  6. Add in the white wine, stir and cook until reduced by half, about 10 minutes.
  7. Add in the chicken broth, nestle the chicken back into the pot and cook for 15-20 minutes until sauce is reduced by 75%.
