Brazilian Bacon Farofa

Ingredients

  • 5 slices of bacon diced
  • 1 farmer sausage chopped optional
  • 5 eggs
  • ½ a large yellow onion chopped
  • salt and pepper to taste
  • 1 ½ cups cassava flour farinha de mandioca
  • parsley chopped, for garnish
  • 2 tablespoons butter

Instructions

  1. Heat 1 tablespoon of butter in a large nonstick skillet. Scramble the eggs gently—you want them soft, not dry! Set them aside.
  2. In the same pan, fry the bacon and sausage (if using) until golden and crispy. Set them aside too.
  3. Add the onions to the pan and cook until they’re soft and translucent.
  4. Toss in the cassava flour, the remaining butter, and a pinch of salt. Stir constantly for 2–4 minutes to toast the flour lightly.
  5. Mix the eggs, bacon, and sausage back into the pan. Stir everything together, sprinkle with parsley, and serve!
